Akashi octopus is prized for its tender texture and sweetness — the strong currents force octopuses to build muscle, resulting in firm yet tender meat. Local takoyaki stands serve the dish with whole chunks of fresh local octopus (not frozen imports), elevating the street food to specialty status.
