Daisen Milk & White Baracca — Mountain Dairy Farm
The Daisen mountain foothills are home to several dairy farms that produce some of Japan's finest milk, cream, and soft-serve ice cream. The cool mountain climate, clean water from Mt. Daisen's springs, and lush pastures create ideal conditions for dairy farming. White Baracca, a farm-direct café and shop near the Daisen-ji Temple area, serves soft-serve ice cream made from Daisen Jersey cow milk — the fat content is noticeably higher than standard milk, creating an intensely creamy, almost buttery flavor that has made it a cult favorite among Japanese ice cream enthusiasts.
The farm also produces fresh cheese, yogurt, and bottled milk sold at the on-site shop. The outdoor seating area overlooks pastures where Jersey cows graze against the backdrop of Mt. Daisen's peak — eating soft-serve while watching the cows that produced the milk creates a satisfying farm-to-cone circularity. The ice cream is so popular that weekends see 30–60 minute waits in summer, but the quality justifies the patience.
