Hamamatsu is one of Japan's two gyoza capitals (alongside Utsunomiya in Tochigi Prefecture), and local gyoza style emphasizes cabbage content — fillings are 50% cabbage vs 30% in standard gyoza, creating a lighter, juicier, sweeter dumpling.
