Karato Fish Market — Fugu Pufferfish Capital
Shimonoseki is Japan's undisputed fugu (pufferfish) capital, handling 80% of the nation's catch and hosting the only dedicated fugu wholesale market. Karato Market transforms twice daily into a lively seafood bazaar where vendors auction ultra-fresh fish directly to the public — sea urchin, live squid, sashimi-grade tuna, and of course, the notorious fugu whose preparation requires licensed chefs due to its tetrodotoxin content.
The market's weekend sushi stalls (every Friday–Sunday and holidays, 10:00–15:00) serve fresh-cut nigiri sushi for ¥100–150 per piece, grilled whale, fugu karaage (deep-fried), and uni (sea urchin) rice bowls. The raw energy of vendors shouting prices, the snap of knife through fresh fish, and the ocean breeze from the adjacent Kanmon Strait make this Yamaguchi's most visceral food experience. Winter (November–March) is prime fugu season when the fish's liver accumulates the most toxin and flavor.
