Toriten — Oita's Fried Chicken with Ponzu
Toriten (とり天) is Oita's signature dish — chicken breast sliced thin, marinated briefly, coated in tempura batter, and deep-fried until golden. The defining element: it's eaten with ponzu (citrus-soy sauce) for dipping rather than salt or sweet sauce. The combination of crispy tempura coating, tender chicken, and acidic ponzu creates a lighter profile than standard karaage fried chicken.
Every izakaya and family restaurant in Oita serves toriten, but specialty shops exist where toriten is the only menu item.
