Aso Aka-Ushi (Red Cattle) BBQ
Aso Aka-ushi (阿蘇赤牛) is a regional cattle breed raised on the volcanic grasslands of Mt. Aso. Unlike heavily marbled wagyu, aka-ushi is lean, deep red, and has a distinct minerality from the volcanic-soil grass diet. The beef is prized for flavor over fat — closer to grass-fed beef than feedlot wagyu. Aso aka-ushi donburi (sliced beef over rice) is the local signature dish, but yakiniku restaurants allow direct comparison with conventional wagyu.
