Kagoshima ramen is a regional variation of tonkotsu (pork bone broth) ramen distinct from Hakata/Fukuoka style. The broth is slightly lighter, often cloudy-white, and topped with kurobuta pork chashu (Berkshire pork), pickled bamboo shoots, wood-ear mushrooms, and thin straight noodles. Some shops add chicken stock to the pork broth, creating a sweeter profile than pure tonkotsu.

The most iconic Kagoshima ramen shop is Noboruya (のぼる屋), a standing-only counter near Tenmonkan that serves ramen in 2 minutes flat.
