Kannawa Steam Cooking — Jigoku Mushi Kobo
Jigoku Mushi Kobo (地獄蒸し工房鉄輪) is a public steam cooking facility where visitors cook their own food using 98°C geothermal steam. Buy raw ingredients at the adjacent market (vegetables, seafood, eggs, meat), load them into bamboo steamers, insert into the steam vent for the specified time (5–20 minutes depending on ingredient), and eat at communal tables. The facility provides everything except the food — steamers, timers, plates, utensils.
Steam cooking is traditional Kannawa cuisine — the mineral-rich steam supposedly enhances flavor while avoiding the oil of frying or the nutrient loss of boiling.
